The Organic Winemaking Process

Natural fermentation is one of the main characteristics of our winemaking process. We use indigenous yeasts, which are naturally present on the grape skins or in the winery environment, to start fermentation. These yeasts are adapted to our terroir and allow us to produce a wine that uniquely expresses our land. We do not use selected or chemical yeasts, ensuring that the wine develops its own identity naturally.

Spontaneous fermentation is a delicate process that requires careful temperature management. At Tenuta Rita Solari, we closely monitor the temperature during fermentation to ensure that the process occurs slowly, preserving the freshness and quality of the wine. We avoid the use of additives that could interfere with fermentation, such as acid correctors or synthetic enzymes, letting nature guide us.

Our winemaking philosophy is based on minimal intervention. Once fermentation has started, we prefer not to intervene unless absolutely necessary. This allows the wine to express itself without artificial alterations, maintaining its aromas and structure intact.

For our premium organic red wines, aging takes place in natural oak barrels, which gives the wine greater complexity and a more balanced structure. The wood helps develop deeper aromatic notes and better integrate the tannins, but never in an invasive way.

One of the distinctive aspects of organic winemaking is the reduced use of sulfur dioxide (SO?). While the use of SO? is allowed in organic winemaking, we use it sparingly. Unlike conventional winemaking, where the amount of sulfites can be significantly higher, at Tenuta Rita Solari, we commit to using the minimum necessary to preserve the wine without compromising its purity and freshness. Our attention to detail and respect for the wine’s natural evolution allow us to achieve high-quality products without excessive use of additives.
